Wine pairing: a slightly richer sparking Chenin Blanc that is great as an aperitif and accompany all amuses-bouche, but the fruitiness and slight sweetness also go well with light desserts such as raspberry and white chocolate mousse, peach crumble or red-fruit Tiramisu.
Benoît fell in love with the Chenin Blanc grape whilst perfecting his knowledge on viticulture as well as viniculture at the Amboise wine school. Working for other wineries specialised in Chenin Blanc wines cemented his love for the grape. In 2011, not 10 minutes away from his school, Benoît found and then purchased his first winery in the lesser-known appellation of Montlouis-sur-Loire, where only Chenin Blanc can be used. The 6 hectare property is still being transformed and some vines replanted, but given that the winery has been certified organic since 2003, it was exactly what Benoît desired! Because not only did he want to make wines using Chenin Blanc, but he also wanted to make wines that fully express the potential of his terroir. So far, so good!
