Since this seven hectare family run winery was founded, the domaine de Cantalauze has practised only the organic and biodynamic procedures of Nature et Progrès.
Protecting the notion of terroir is of particular importance to this winerys owners, as are traditional methods of wine making. They strongly believe that the only way to respect these principles is via a farming method that fully respects the soil life and biochemical cycles of the environment. Because of this they decided to leave the appellation controlled by INAO. They feel that it allows too many chemically synthesised products as well as certain techniques that do not fit-in with the philosophy of the winery. They continue to nurture their vines and produce their wines according to Nature et Progrès.
Guy, Brigitte, Pierre-Olivier and Pauline seek the rebirth of forgotten grape varieties, the biodiversity of each plot of vineyards, and to be free to experiment with ancient practises as well as innovative techniques. They invite you to discover unheard grapes from the area of Gaillac and to rediscover other more famous ones.
