This wine smells intensely of citrus fruits such as pink grapefruit, which are complemented by hints of mango and passion fruit. The minerality in the mouth enhances the fruit and we are left with discreet aftertastes of sweet spices.

It was during the 14th century that this winery was built in the centre of Saint-Bris-le-Vineux, and the appellation is situated right next to Chablis. According to Ghislaine and Jean-Hugues Goisot, wine is created in the vineyard before it is created in the winery, as it is impossible to make great wines without perfect grapes. The yields are controlled in order to intensify the taste and personality of the grapes, which are never harvested prior to obtaining perfect maturity. Chardonnay, Pinot Noir, Aligoté, Sauvignon Blanc and César are scrupulously cultivated according to the rules of Biodynamic agriculture to attain the maximum of terroir expression, to stimulate and strengthen the vines immunity and, above all, to respect the environment.
